Death by Chocolate

Chocolate is a favourite with everyone, and what a way to make this less of a guilty pleasure by adding some fruit. One of our favourite chocolate recipes is our Chocolate and Cherry Tart, this rich and delicious combination will go down a treat at your BBQ’s this summer!

Chocolate and Cherry Tart

Ingredients

Pastry

250g of plain flour

100g of icing sugar

25g of ground almonds

Pinch of salt

100g of unsalted butter, plus more for greasing

egg

egg yolk

Chocolate and cherry filling

500ml of double cream

400g of  70% dark chocolate , roughly chopped

eggs , beaten

100g cherries, stoned

Method

Place the flour in a mound on a board. Make a well in the centre. Place the butter and sugar in the hole and mix together with your fingers, leaving the flour in the circle around the edge.

Next, mix the sugar and butter with the eggs. Draw the flour into the mix. Using a pallet knife, chop the flour into the mix. Next, using the pallet knife scrape and spread the mix until it comes together. Roll into a ball and refrigerate until cool.

Next, roll out and line a 23cm tart tin, allow to rest again for an hour or more. Then blind bake for 20 minutes or until golden and cooked.

Whilst baking, prepare the filling. Heat the cream until just off a simmer. Remove from the heat and add the broken chocolate. Incorporate the eggs, beating with a whisk all the while.

Pour this into the tart tin and add the cherries. Bake for 20 minutes at 180oc. There should be a faint wobble when it is cooked.

Allow to cool and enjoy!
