It’s that time of year again when school is out for the summer, the sun is shining (hopefully!) and you can spend some quality time with your little ones
A recipe that we love at Caiger & Co is our Raspberry Pavlovas, simple and fun and is something that you can whip up quickly to surprise them or why not spend the afternoon baking together?
Raspberry Pavlovas
Ingredients
2 eggs whites
110g caster sugar
2 tsp of raspberry coulis/dried raspberry powder
1 tsp pink food colour
100ml whipped cream
200g fresh raspberries
Preheat the oven to 100C
Method
Grease and line a baking tray.
Whisk the egg whites to stiff peaks, when done add the caster sugar a tablespoon at a time, whilst whisking. To check if the sugar is done, rub a little of the mix between 2 fingers, if it feels very grainy still, keep whisking.
Once ready, mix the puree and food colouring together. Paint this with a pastry brush in to stripes down the side of a piping bag. Place the meringue mix into the bag and pipe onto the prepared trays.
Bake in the oven for 1 hour or so until dry and crisp to the touch. Allow to cool and top with the cream and raspberries.
