I Carried a Watermelon

If you celebrated National Watermelon Day on the 3 rd August, then like us in the Caiger & Co kitchen, you might have some leftover! We love this recipe, quick and perfect for a summers evening.

Watermelon, radish, feta and salted almond salad

Serves 4 as starter

500g diced watermelon
200g radishes, washed and halved
100g crumbled feta
100g salted almonds
Juice of 1 lemon
Splash of Olive oil
20 chopped mint

Mix it all together and enjoy!
