Figs are available all year round, however the best season for fresh Figs is between summer and autumn. Not only are they a healthy ingredient, Figs can add sweetness to many different kinds of dishes.

Puff Pastry Tarts with figs, honey and goats cheese
Ingredients:
1 x 320g sheet of puff pastry (shop bought)
8 figs
2 tbsp. honey
200g goat’s cheese
100g Melted salted butter
A few sprigs of thyme
Method
Preheat the oven to 200oC.
Grease & line a baking sheet.
Roll out the puff pastry and cut out 3” rounds for a starter or 2cm rounds for canapés.
Score the centre of each round with a cross hatch pattern, before placing some goat’s cheese, and a slice of fig on top. Brush with the butter and the honey and place in the oven for 10-15 minutes.
