It’s all peachy!
Peach season is at its peak and here at Caiger & Co. we are certainly making the most of it!
We use peaches for everything from a simple snack, to making smoothies, in summer salads and of course to make delicious desserts. At a BBQ that we catered for last week we made a salad with peaches, parma ham and halloumi which proved to be a big hit. Another of our favourite peach recipes is grilled peaches with vanilla shortbread. It’s a scrumptious pudding and the perfect end to a summer dinner party. Give it a go yourself…
Grilled peaches with vanilla shortbread
4 peaches, cut in half and stoned
225g unsalted butter, softened, plus extra for greasing
110g caster sugar, plus extra for dusting
225g plain flour, plus extra for dusting
Pinch of salt
1 tsp vanilla paste
Preheat an oven to 170oC, bake once chilled for 20 mins or until lightly golden. Allow to cool on wire racks.
