Summer parties minus the stress

Temperatures are set to soar this week and what better way to enjoy the sunshine than by inviting some friends round for a summer party. As well as catering for a variety of events, we also offer a drop off service allowing you to enjoy your party without the stress of cooking.

Our menus are seasonal, bespoke and tailored to your vision, as well as to meet any dietary requirements. The kinds of dishes you may find on a drop off menu include twice baked goats cheese soufflés and roast salmon with broad beans, peas, dill and sautéed potatoes. One of our favourite summer desserts are raspberry pavlovas that look beautiful and taste delicious. Raspberries are in season at the moment so it’s the perfect time to enjoy this dessert at its best. Raspberry Pavlovas

2 eggs whites
110g caster sugar
2 tsp of raspberry coulis/dried raspberry powder
1 tsp pink food colour
100ml whipped cream
200g fresh raspberries

Preheat the oven to 100oC

Grease and line a baking tray

Whisk the egg whites to stiff peaks, when done add the caster sugar a tablespoon at a time, whilst whisking.

To check if the sugar is done, rub a little of the mix between 2 fingers, if it feels very grainy still, keep whisking.

Once ready, mix the puree and food colouring together. Paint this with a pastry brush in to stripes down the side of a piping bag. Place the meringue mix into the bag and pipe onto the prepared trays.

Bake in the oven for 1 hour or so until dry and crisp to the touch. Allow to cool and top with the cream and raspberries.
