“All Out”

With the Ashes in full swing, why not get together with a group and head over to the local cricket field for a game. Don’t forget to take along a picnic, or what is traditionally known as “Cricket Tea”, something considered essential to the perfect cricket match.

With finger sandwiches, biscuits, light and fluffy cakes and scones at the forefront, here’s a simple Shortbread recipe, which will be sure to ‘wow’ your friends and family.

Shortbread

Ingredients

225g unsalted butter, softened, plus extra for greasing
110g caster sugar, plus extra for dusting
225g plain flour, plus extra for dusting
110g cornflour
Pinch of salt
1 tsp vanilla paste

Method

To make the shortbread, rub all of the ingredients together. Kneed lightly to form a dough.

Let the dough chill in the fridge for 1 hour before rolling out between two pieces of greaseproof paper. Cut out shapes or slice into fingers. Chill again for 30-60 mins.

Prehaeat an oven to 170oC, bake once chilled for 20 mins or until lightly golden. Allow to cool on wire racks.
