Vegan and Gluten Free Banana Bread

No this is not a trick, and yes this is so yummy, so easy and only require 1 non regular store cupboard ingredient!

The problem I normally have with recipes like these is the fact it requires a totally new basket of ingredients, before I can begin to make it. This recipe however is the definition of simple. If you don’t have gluten free flour, I would just use normal flour, or even almond meal.

So here you go, have a try and let me know as always how it goes!

Vegan and Gluten Free Banana Bread

350g ripe bananas (peeled weight)

200g gluten free plain flour

3 tsp baking powder

1 tsp salt

130g soft, light brown sugar

4 tbsp light olive oil

70g walnuts, roughly chopped

50g rasins

1. Preheat the oven to 170C. Put two-thirds of the peeled banana chunks into a bowl and mash until smooth. Roughly mash the remainder and stir in gently.

2. Sift the flour, baking powder and salt into a bowl, and grease and line loaf tin.

3. Put the sugar, eggs and oil in a large bowl and beat with an electric mixer until pale and slightly increased in volume. Fold in the bananas and the dry ingredients until you can see no more flour, then fold in the walnuts and raisins.

4. Spoon into the tin and bake for about 40 minutes until a skewer inserted into the middle comes out clean. Cool in the tin for 10 minutes before turning out on to a rack to cool completely.
