Trick or Treat: Gruesome Almond Fingers

Halloween is upon us so get yourself in the spooky spirit with these ‘Gruesome Almond Fingers’.  These biscuits are fittingly ghastly for Halloween, perfect for trick-or-treaters or Halloween themed parties plus they taste great!

For an adult Halloween party try matching these gruesome fingers with a Recioto della Valpolicella – an Italian dessert wine whose rich cherry aromas complement any almond dessert whilst the deep ruby colour will add to the ‘gruesome’ theme.

 

Ingredients:

250g butter softened

125g icing sugar

1 egg

1 tsp. almond extract

1 tsp. vanilla

280g flour

1 tsp. baking powder

1 tsp. salt

140g cup whole blanched almonds

1 tube of red decorating icing

 

In a bowl beat together butter, sugar, egg, almond and vanilla extract.  Sift together flour, baking powder and salt and add slowly to the egg mixture.  Roll into a ball and cover with plastic wrap, refrigerate for 30 min.

Preheat oven to 180oC.  Cut the dough into four sections, work a quarter of the dough at a time whilst keeping the rest refrigerated.  Roll a heaped tablespoon into a finger shape and squeeze in the centre to make a knuckle.  Press almond firmly into one end of the cookie. With a sharp knife make lines on the knuckle and just under the almond.

Place on a greased cookie sheet and bake for 20-25 minutes or until pale golden.

Let the cookies cool for 3 minutes, carefully lift up the almond and squeeze the red decorator gel onto the back of the nail bed and then replace the almond, letting the gel ooze out. Remove onto racks to cool completely.
