The Great Caiger Bake Off!

With The Great British Bake Off back on our screens, we love nothing more than an afternoon baking session in the Caiger & Co Kitchen. With the delicious combination of rich ‘Reine Claude’ plums and the sweetness of hazelnuts, this cake recipe is sure to impress.

Plum and hazelnut cake

Ingredients

6 reine claude plums, stoned and sliced in to 1/4
100g chopped hazelnuts
6oz of sugar
60z of butter
60z of Self raising flour
1.5tsp baking powder
zest of 2 oranges
3 eggs
1tsp orange blossom water

8” lined cake tin

Method

Preheat the oven to 180oC.

Mix all of the ingredients together, holding back the plums. Place half the mix into the tin and bake for 25 mins.

Take out of the oven and place the plums on top of the baked cake mix along with the 2nd half of the mixture.

Bake for 1 hour, covering with some tinfoil if necessary. Remove from the oven, allow to rest for 5 minutes and then turn out upside down on a cooling rack.
