Summer weddings are so last year. Who wants to be sweaty in their wedding dress anyway… Plus wouldn’t you rather be chowing down on heart-warming feast than nibbling on crudités?

Here are five reasons why winter weddings are the way forward:

Winter feasting

A menu inspired by the holidays. What better way to soak up a day of celebrating than treating your guests to warming platters of tartiflette, with lashings of charcuterie, and breads, served alongside seasonal salads. Conjur up a nostalgia of an escape to the alps or simply lazing on the sofa in front of a roaring fire with your favourite red wine and macaroni cheese.

Fine dining comfort

Comfort food needn’t mean big style sharing platters. If fine dining is more your style then we’ve got you covered. Why not showcase the best seasonal ingredients in a five course tasting menu? Dishes spiked with cranberry, walnuts and oranges from the starter to the dessert. A starter of fermented black barley, confit egg yolk, salt baked beetroot, cranberry and walnut pesto, and ending with a Mulled crème caramel with orange syrup, confit clementine, cranberry Florentine.

Cocktails for pudding

Indulgent cocktails to kick start an evening of merriment – why not! Hot mulled wine served from a station for guests to help themselves to, or a twist on a classic, serving a Caiger Christmas martini – Butterscotch schnapps, amaretto liqueur, crème de cocoa and Cru coffee. Or maybe rounding off dinner with a shot of baileys is more your scene. Whatever your taste – surely the sweeter the better!

Festive frivolity

From the flowers to the linens, there are all sorts of small seasonal touches you can add to create a beautiful winter atmosphere. Illustrated menus with winter flowers or vegetables; natural name places of fir cones, or ivy. Or if arts and crafts is not really your thing – why not be creative with your colours – simple gold charger plates atop simple rustic wooden tables, swapping the standard white linen napkins for a deep red. Fairy lights are a simple way to create the perfect lighting and as for the flowers – simple seasonal greenery, interspersed with whites makes for the perfect natural table runner.

Everyone’s already in the party spirit

With Christmas just around the corner, no one is going to need convincing to let their hair down.

We love mornings like this🥂 What a better way to spend this mid week morning than with breakfast by @caigerandco and champagne with @charliewethered We had the opportunity to taste champagne by @mrbillecart & @champagne_billecart_salmon. This family run champagne house was founded in 1818. Its current tasting team consists of eight members led by the wisest, a 100 year old who swears by having a glass a day! Each year, 200 hand pickers harvest grapes over 300 hectares of land to be expertly crafted and stored to produce upwards of two million bottles. A bottle of Billecart-Salmon can be found in nearly every three and two Michelin Star restaurant. We paired this delectable champagne with an incredible breakfast consisting of a lovely truffle-butter toast topped with creamy scrambled eggs, smoked salmon, and caviar. Let them eat cake 💕🍸✨A glimpse into a wonderful evening by @caigerandco in partnership with @34bloomsbury & @blacklinesdrinks. ❤️‍🔥A coming together of like-minded brands to celebrate female friendship in the name of Galentine’s Day with a select group of wedding & event planners. The setting was the beautiful Morrell Room at the divine 34 Bloomsbury. A newly renovated 1850’s Georgian townhouse in the heart of Central London. The perfect canvas to host a myriad of events. 🍊 Guests were greeted with a decadent @natoora grazing board, seasonal canapés & treated to cocktails by @blacklinesdrinks. A Shirley Temple upon arrival, a Spicy Tommys Margarita upon sitting, followed by Pear & White Tea Fizz. 🍰 The cake piping workshop was hosted by the talented Anna of @__byanna__, known for her bento box heart cakes & delicious buttercream creations. The event vision was bought to life thanks to furniture & glassware hire by the best in the business @joneshire, and peony linens by @just_4_linen. 💘The finishing touch was embroidered heart napkins created bespoke for the event by @thelostgirls_uk. In our rhubarb era ✨ 🔺Delivered this week from our supplier @natoora! The arrival of @rhubarbrobert’s red boxes (they have hit cult status in the industry). Inside, the first batch of forced rhubarb stems of the season from Yorkshire’s Rhubarb Triangle.⁠ ⁠ 📍One of our sustainability pillars is to support local & independent growers. The provenance of our ingredients is very important to us and we will be making the most of this supply from now until the end of the season (April)! ❣️Yorkshire Forced Rhubarb is an out of season rhubarb that is first grown outside for a period of two years, after initial exposure to the frost, the rhubarb is lifted from the ground and placed into forcing sheds. 🕯️ Once in the darkened sheds, the Rhubarb is harvested by candle light to maintain the tenderness of the shoots & heat is applied causing the rhubarb to grow quickly in search of light. January has been such a buzz as we prep for wedding season! Filled with site visits all around London & hosting lovely new couples for tastings ✨ Highlights from a tasting last week with V&W. The setting for this stunning wedding will be the ethereal Asylum Chapel @maverickprojects ⛪️ The brief for this menu was a veggie focus. Menu highlights include seasonal crowd-pleasing canapes, locally sourced wild mushrooms & our signature layered potato chips. 🧈 We used one of our favourite suppliers @toklas_bakery to supply the bread for a memorable bread & butter starter, followed by sharing mains, sides & a @marmite fudge to finish. We create a bespoke menu for each client & this is a menu like no other! A sneak peek of what we have planned... Summer wedding tasting for C+C ☀️ January is a big month for wedding tastings at Caiger & Co. We absolutely love hosting couples in our Battersea tasting room, an integral part of the planning journey where we present the menu to the client & gather feedback✨ The creative brief from this tasting was to tell a story through the menu, celebrating Australian meets British culture with ingredients sourced as locally as possible. Our menu proposal included a nod to the traditional Australian summer BBQ, with an outdoor Asado where the focal ingredient will be venison sourced from a local farm. Cooked over a fire pit imparting a smokey depth of flavour to the meat & a selection of seasonal vegetables. The Mains: ~ Marinated asado venison, french beans, dauphinoise potatoes with confit garlic & port jus ~ BBQ whisky venison with textures of carrot, wild herb pesto, onion ash and toasted grain seeds To Finish: ~ 🇬🇧 Chocolate delice with salted peanut brittle & creme fraiche ~ 🇦🇺 Pavlova, vanilla ice cream, white & dark chocolate shards, salted caramel sauce The late night eats for guests will be an Aussie sausage sizzle (iykyk). January 🤝 Summer wedding tastings ☀️ Last night we hosted N&S at our unit in Battersea and our chefs cooked up a storm. Highlights from the menu included a veggie focus, with a luxury burrata starter & our signature tiramisu to finish. The canapes: ~ Cauliflower croquettes with black garlic aioli ~ Whipped aged cheddar, honey gel, chive & brioche toasts ~ Taco cups with smashed avocado, blackened shrimp & lime juice ~ Mini masala chaat chickpeas with tamarind yoghurt & pomegranate seeds ~ Greek BBQ Chicken skewers with oregano, lemon oil & whipped feta dip ~ Slow braised Korean short rib croquette, pickled cucumber, with a gochujang and smoked salt dipping sauce For dessert, our Caiger tiramisu was a light & indulgent finisher, reminiscent of an Italian Summer. Event & catering trends we predict for 2024✨Based on our event briefs, moodboards & menu proposals so far for this year. Peachy keen: 🍑 The Pantone colour of the year is Peach Fuzz. A velvety gentle peach tone that radiates warmth & modern elegance. This is cropping up in a few of our styling briefs, offset with creams or contrasting with pastel blue. Mocktail menus: The non-alcoholic drink, not just an after-thought on the bar menu! Creative & thoughtful mocktail & non-alcoholic drink menus. Exploring the many possibilities for non-alcohol options such as @nuisancedrinks @trip.drinks @punchydrinks Smoked: Elevating a menu with a subtle smoked theme. Creatively adding a touch of smokey flavour in unexpected ways - expect to see more in our menus this year! ~ Polenta chips, smoked coconut yoghurt & togarashi ~ Charcoal cups, edamame, goats curd & smoked chilli oil Intimate dinner parties: A shift from maxi to micro events - small gatherings with curated guest lists and an elevated menu experience. Such as a guest list of 20, for a 6-course tasting menu. Root to stem approach: Our clients are becoming more aware of the provenance of the ingredients in their food & mindful of the impact of events & waste. We approach all events from a circular kitchen system, including creating zero waste menus & cleverly up-cycling surplus ingredients. Potted herbs: Event styling that incorporates herbs; mint, rosemary & basil. For guests to add as garnish to cocktails, drinks & dishes as they please. Late night eats: A large demand for our signature & decadent late night eats. Think, truffle oil mac & cheese, Caiger fried chicken mini burgers (CFC) & goats cheese grilled sandwiches. Supporting artisan growers: We are constantly evolving our supplier network & connecting with local & artisan growers to build our menus around celebrating specialised ingredients. Autumn Equinox by Caiger & Co, hosted in collaboration with @parkvillage & @natoora ✨ 〰️ The Intention The Caiger & Co Autumn showcase was an opportunity for us to announce our new supplier @natoora, who provided all of the raw produce for the evening. This set the tone for the five-course menu which was crafted around the seasonal ingredients from their grower network, bought to life by our brilliant chefs. The Stables at @parkvillage was the perfect venue backdrop & allowed for a beautifully intimate setting for the gathering of new clients & nurturing our existing relationships. Our events team styled the space paying homage to the harvest, abundant produce overflowing into the tablescaping, paired with tableware & linens in a colour palette reminiscent of an autumn feast. @benjaminsevents provided the bar set up, service & mixologists for the evening. Guests were greeted with a Quince Martini, served wine paired with each course, and a Big Apple Manhattan to finish. Caiger Allotment update! Over the weekend was our first Autumn harvest. We gathered a haul of potatoes, carrots, beets, squash, chard & perpetual spinach in abundance. We have just finished up with the last of the Summer tomatoes & courgettes, and planted a new batch of cavolo nero, kale & parsnips. Our bespoke menus are always a celebration of the produce in season, and we source our food from the best local suppliers who value sustainability and quality as much as we do. Our supplier @thereal_cure is a perfect example of this. They use traditional artisan processes of curing, fermenting, air drying & smoking techniques to make exceptional British charcuterie (salami, chorizo & hams). Based at Hartgrove Farm in Dorset, The Real Cure are pioneers of the British charcuterie movement. They process their entire range in small batches, using the finest high welfare meat sourced from across the Dorset countryside; wild deer, grass fed beef, and free range pork. We collaborated with @thelostgirls_uk at our recent @thefendalegroup showcase. The Lost Girls are a conscious design studio based in Battersea, that create and rent out unique tableware. They offer a bespoke embroidery service in their 'clothshop' to personalise linen or cotton; scalloped, square, ruffled & rectangular napkins. Often these personalised touches can also be taken from the event by guests as keepsakes. We’ve been busy these last few weeks finalising wedding quotes, hosting final tastings and getting dates in the diary. It has us looking forward to the season and thinking about some of the amazing weddings we’ve been a part of in the past. One that stands out is a wedding we catered in Springhead Trust in Dorset for the lovely couple A & T. They wanted to make the most out of the events beautiful grounds and have a unique food station for the guests to enjoy after the ceremony. They ended up opting for an oyster bar with the oysters being chucked to order. It created a wonderfully interactive and theatrical experience for the guests that paired perfectly with a flute of cold champagne on a sunny day. #catering #weddingseason #weddings #events #instafood #foodie #food #cooking

We're taking a trip down memory lane and looking back on this amazing gourmet dining club we had the pleasure of being a part of a few years back.
