Shrove Tuesday

I can’t believe it’s pancake day again! Pancakes for breakfast? Why not? Savoury pancakes for dinner? Why not? I think anything goes here, but what you need is a recipe for an easy batter. The easiest one to remember is the 3-2-1 recipe – 3 cups of flour, 2 cups of milk and 1 egg. Mix everything together, and although it is good to let your batter rest for a little while, you can use it straight away if you’re in a hurry.

You can then add some blueberries or other berries to your batter if you want to, or if like me, you like it even simpler than that, just stick to lemon & sugar!

My friend doesn’t really like sweet things, so I always make spinach pancakes for her – apart from tasting good, they go an amazing colour! Just add a knob of butter to some chopped, wilted spinach (approx. 100g. Making sure all of the excess water is removed as well) and then add to your batter with a pinch of salt & pepper. Cook as with normal pancakes, serving with a spoonful of ricotta on the top.
