Back to School!

Even though you have enjoyed the past 6 weeks of summer holidays, it is now time to send your precious little ones back to school. We all know how stressful the first few days back can be, so this deliciously easy treat is perfect for Mummy to enjoy at the end of the week with a glass of wine.

Celeriac Dip

Ingredients

2 celeriacs
Olive oil
150ml Greek yogurt
1 tbsp cream cheese
1 tbsp real mayonnaise
1tsp chopped dill
1tsp chopped parsley
1/2 crushed clove of garlic
juice of lemon
Salt & pepper

Method

Peel, and roast 1 celeriac in a little olive oil at 180 oC for 20-30 mins or until soft.

Remove from the oven, mash with a potato masher until soft. Season with lemon juice, salt and pepper.

Grate onto this the last of the celeriac. Add lemon juice to stop discolouring.

Mix in the other ingredients, 1 tbsp of olive oil and season. Best to be served with crudite or on toast with cheese!
