Alix at Borough Market

Today we are at Borough Market hosting a cooking demonstration. Expect to see some amazing ideas for summer picnics with some fun ideas for easy ways to transport them as well!

Here is one of the dishes Alix will be demonstrating Pan Bagnat. A delicious version of a sandwich – rough translation of which means wet bread due to the marinaded flavours in the centre – delicious!

Pan bagnat

1 Small country loaf
3 tbsp olive oil
3 hard boiled eggs peeled and sliced
handful of basil
1 large red tomatoes sliced
2 roasted red peppers
2 tsp capers
Small handful of olives chopped
8 anchovies

1. Cut the top off the loaf about and pull out some of the bread from the center. Drizzle the olive oil all over the read and rub with garlic to season.

2. Next layer into the bread tomatoes, eggs and peppers and basil, sprinkling over the capers, olives and anchovies as you go.

3. Place the lid on the bread, wrap in baking paper and foil and press down for several hours to allow the flavours to soak into the bread. Serve in large wedges!
