Menu Ideas – British Summer Barbeque

With the first few days of summer starting to break through the gloom, we’re busy planning some new summer barbeque menues which are not only delicious but also – obviously – showcase some of the amazing seasonal British produce that we’re lucky to have available to us. Here are some examples of what we’re serving up this summer:
- Whole barbequed sea trout with watercress and lemon aioli
- BBQ flank steak with wild rocket and pistachio pesto
- Butterflied leg of Welsh lamb in anchovies and red wine marinade, with kefir tzatziki and baby mint
- Spiced cauliflower steaks with romesco sauce and goat’s curd
- Asparagus wrapped in British lardo, finished on the BBQ
- Charred baby gem lettuce hearts, with crispy garlic and apple cider vinegar
- Blackened tenderstem broccoli with goat’s yoghurt dressing and shaved heritage beetroot
- Ribboned summer slaw with BBQ baby courgettes, chives, toasted pumpkin seeds and nasturtiums
- Carrot and pickled red onion salad with Caerphilly, parsley and pomegranate seeds
- Smokey heritage tomato salad with spiced chickpeas, coriander and tahini dressing
- Toasted sugar meringue roulade, with roasted plums, local honey and whipped mascarpone
- Strawberry and basil parfait pots with black pepper shortbread crumble
- Cherry frangipane slice with clotted cream and toasted almond brittle
