Outdoor Dining

At Caiger & Co we’ve got a feeling that this summer is going to be all about outdoor dining. We’ve loved creating special al-fresco dining for years; be it a paella party or a sharing style feast of abundant seasonal platters. This year we’ve taken inspiration from Central and Southern America offering outside dining with a theatrical twist. We’re talking food cooked over fire pits.

We’re thrilled to have purchased some of Tom Bray’s unbelievable fire cooking equipment so that we can make your dining experience that extra bit special. Think cleverly designed hanging frames cooked over wood, built so that you can cook your meat, sauce and vegetables all at once, each being imparting with a Smokey depth of flavor and crosses for cooking a whole lamb over flames.

EXAMPLE MENU

Paella stations

Dorset seafood paella, spider crab, mussels, monkfish and samphire
Vegetarian paella, with roasted peppers, artichokes and olives
Vegan seasonal vegetable paella, topped with blistered beans, tarragon salsa verde, fried capers and lemon zest, coriander

For the BBQ

Grilled marinated prawns with chorizo, smashed avocado and sriracha mayonnaise
Sicilian grilled chicken thighs with a burnt lemon and whipped feta dip
Charred lardo wrapped asparagus with n’duja crumb
Beef ribeye with charred chimmichuri & fermented hot sauce
Bourbon brined chicken

Summer salads

Shredded thai basil, tomato & watermelon salad with a mirin dressing
Ruby English salad of strawberries, cherry tomatoes, marinated red onions & roasted red beetroot
Farro & roasted heirloom tomato salad with marinated feta & miso dressing
Roast beetroot pickled fennel, pistachio cream, crushed hazelnuts & pea shoots
Charred broccoli with cashew & thyme kefir & sesame dressing
Blackened carrots with daikon & pomegranate
Calcots leeks burnt on the BBQ with tarragon oil & smoked salt

Something sweet

Burnt peaches and figs with amaretto, lemon & mint

Wild seasonal cocktails

Rose & tarragon gin lemonade Gin, sparkling rose lemonade, fresh tarragon
Lime, cucumber & passion fruit caiprinha, cachaça, fresh lime, cucumber, passion fruit puree
Summer Garden Gin, elderflower cordial, apple juice, Prosecco, cucumber
Pink Paloma Tequila, Aperol, raspberry syrup and pink grapefruit juice
Mezcal Negroni Mezcal, Campari, sweet vermouth and fresh orange
Pink Lillet Lillet rose, grapefruit juice, gin, edible flowers
